The Almond: Queen of Algerian Pastry
The almond holds a central place in Algerian gastronomy. It is the base ingredient for ghribia, tcharek mseker, dziriette, and dozens of other pastries. But not all almonds are equal, and knowing how to choose them makes all the difference.
Signs of a quality almond:
- Size: a quality almond is uniform, medium to large. Small, irregular almonds often come from secondary harvests.
- Colour: the skin should be a uniform brown. Dark spots or a dull appearance may indicate poor storage or ageing.
- Crunch: a fresh almond snaps cleanly, without being elastic or floury. If it bends instead of breaking, it has absorbed too much moisture.
- Taste: sweet, with a slight buttery note. Any pronounced bitterness is a sign of rancidity or a bitter variety (to be avoided for direct consumption).
Algeria is one of the largest almond producers in the Mediterranean basin, particularly in the regions of Tlemcen, Miliana, and Blida. Algerian almonds are distinguished by their rich flavour and high oil content, making them especially well-suited for pastry-making.
Pistachio, Cashew, Peanut: The Apéritif Essentials
Beyond the almond, nuts play an essential role in Algerian apéritif culture — that moment of conviviality where you snack among friends over tea or lemonade.
Pistachio is considered the noblest nut. The best pistachios are those whose shell is naturally open — a sign of full maturity. The nut's colour should be a vivid green, indicating freshness. Yellowish or brownish pistachios are old. Prefer pistachios that are lightly salted and dry-roasted, without added oil.
Cashew is gaining popularity in Algeria. Its creamy texture and mild taste make it a favourite among younger generations. Choose whole cashews (not broken) of a uniform cream-white colour. Browned cashews have been over-roasted and will taste bitter. Salting should be light — just enough to enhance the natural flavour.
Peanut (kaoukao) remains the most popular nut in Algeria, affordable for every budget. The best ones are roasted in-shell, which preserves their freshness. They come plain, salted, or spiced with paprika and cumin — a particularly addictive Algerian speciality.
Proper Nut Storage
Nuts are delicate products whose quality can deteriorate rapidly if not properly stored. Their number one enemy? Fat oxidation, which causes rancidity.
Here are the storage rules to follow:
- Temperature: store your nuts in a cool, dry place, ideally between 15°C and 20°C. Above 25°C, the natural oils go rancid faster.
- Light: avoid direct sunlight. Light accelerates oxidation. Prefer opaque containers or closed cupboards.
- Air: airtight containers are essential. Each opening exposes nuts to oxygen and ambient moisture. Use glass jars with seals or resealable zip bags.
- Humidity: the silent enemy. Nuts easily absorb moisture, which softens them and encourages mould. Keep them away from active cooking areas (cooking steam).
In the refrigerator, unroasted nuts keep for up to 6 months. In the freezer, up to a year. Roasted and salted nuts keep for 2 to 4 weeks at room temperature, 2 months refrigerated.

Beyond the taste pleasure, nuts are true health allies. Rich in essential nutrients, they deserve a daily place in our diet.
Almonds are an excellent source of vitamin E (a powerful antioxidant), magnesium, and fibre. A daily handful (about 23 almonds, or 30g) contributes to cardiovascular health and helps regulate cholesterol.
Pistachios are rich in plant proteins, potassium, and vitamin B6. They are the least caloric nut, making them a smart snack. Their green colour comes from lutein and zeaxanthin, antioxidants beneficial for vision.
Cashews provide iron, zinc, and magnesium. They are particularly rich in monounsaturated fatty acids, the "good fats" that protect the heart.
